Apple Spice Cupcakes with Spice Cream Cheese Frosting

These apple spice cupcakes with spice cream cheese frosting are to die for. They are perfect for the person who likes their cupcakes a little less sweet. The cupcakes are light and fluffy, and have a pop of apple and spice flavor. The frosting is perfectly balanced between cream cheese, sweet, and spices. My husband, who claims to hate apples and cinnamon even thought these cupcakes were amazing! Quick baking tip: Use baking spray. I LOVE Baker’s Joy baking spray found on Amazon, HERE. I lined my cupcakes, but I still spray baking spray over the top so the cupcakes don’t stick to the liners and easily come out. This…

Yum Yum (Kielbasa and Spinach Pasta)

Yum Yum, or (Kielbasa and Spinach Pasta), is a staple in our household. This meal is quick, easy, and everyone loves it. This dish is one you can’t go wrong with. My family nicknamed it Yum Yum for a reason! My 2 1/2-year-old son loves this meal, and we all know how difficult it can be cooking for a toddler. You can make it with whatever kind of noodles you wish, but my favorite are egg noodles or bow tie (Farfalle) Pasta. I also like to use hot Rotel rather than original to add some spice. If you enjoyed Yum Yum (Kielbasa Spinach Pasta) leave a comment below or visit…

    Churro Cream Puffs

Churro Cream Puffs are a hit! They pair well with any Mexican cuisine especially, crockpot pork carnitas. The cream puffs are a huge crowd-pleaser, but it can be quite a lengthy recipe. I highly recommend making the pastry cream a day or two before completing the recipe. I made this entire recipe with my son, who was 2 1/2 years old. He helped me with all the steps besides dipping the puffs in honey and cinnamon sugar. That is because he doesn’t like his hands to be sticky. While these churro cream puffs are to die for, they are a more advanced level to make with your kiddo. There are…

    Crockpot Pork Carnitas

This crockpot pork carnitas recipe is perfect when feeding a larger crowd of people. The pork itself is tender and delicious, but add corn or flour tortillas with some toppings, and you have a fabulous dinner for multiple guests. This is a great meal to sit and forget until the last few minutes before serving! Everyone will rave about how tender the pork is. I enjoy this recipe when turned into crockpot pork carnitas tacos. I chopped up white onions, jalapeños, cilantro and tomatoes. I also provided salsa, sour cream, and guacamole so everyone could assemble their tacos according to taste. Serve with a side of rice and beans, and…

    Chocolate Orange Cake

This Chocolate Orange Cake is deliciously moist and the perfect combination of chocolate and orange. Boone and I made this cake for our family Christmas Dinner, and it was a hit. The cake traveled well in the car. I decorated the cake with orange slices, and they helped the saran wrap stay out of the frosting for the car ride up. We also made the cakes the night before, saran-wrapped them, and put them in the fridge overnight. The chocolate orange cake was perfectly ready to be decorated the next morning and still kept its moist flavor.  I love making cakes because they are a quick and easy thing to…
