Red Velvet Cake Balls
These delicious red velvet cake balls are perfect for Valentine's day. They are moist, fun to make, and a great kid friendly treat.
Ingredients
For the Cake:
- 1/2 Cup Boiling Water
- 1/4 Cup Unsweetened Cocoa Powder (I use Ghirardelli)
- 2 1/4 Cup All Purpose Flour
- 1/2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 1/4 tsp Ground Cinnamon
- 2 Cups Granulated Sugar
- 1/2 Cup Vegetable Oil
- 1 Stick Unsalted Butter (8 Tbsp), melted
- 2 Large Eggs, at room temperature
- 1 Large Egg Yolk, at room temperature
- 1 Cup Buttermilk, at room temperature
- 2 tsp Vanilla Extract or Vanilla Bean Paste
- 3 tsp Red Food Coloring (you may need more)
- 1 tsp Distilled White Vinegar
For the Cream Cheese Frosting:
- 8 oz cream cheese, at room temperature
- 1 Stick Unsalted Butter
- 1 tsp Vanilla Extract or Vanilla Bean Paste
- 2 Cups Powdered Sugar
For the Chocolate and Decorations:
- 3-4 11.05 oz Packages of Chocolate Chips, melted
- Sprinkles (optional)
Instructions
For the Cake:
- Preheat the oven to 325 degrees F. Line the bottom of three 8-inch cake pans with parchment paper and spray the pans generously with nonstick baking spray.
- In a small heat resistant bowl, whisk the boiling water and cocoa powder. Let stand for 5 minutes.
- *In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- *In the mixing bowl of a stand mixer fitted with the whisk attachment, whisk together the sugar, vegetable oil, and melted butter. Add in the eggs and egg yolk and whisk until very well combined. Add in the buttermilk, vanilla and food coloring and whisk to combine. Add the vinegar and cocoa powder and water mixture. In three separate additions, whisk the flour mixture until each addition is incorporated.
- Divide the batter equally between the three prepared pans. Tab the bottoms of the pans on the counter several times to get rid of any air bubbles.
- Bake the cakes for 25-30 minutes, or until a toothpick comes out clean.
- While the cakes are baking, make your frosting.
For the Cream Cheese Frosting:
- *In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter on medium speed until light, creamy, and smooth.
- *Scrape down the sides of the bowl, then add vanilla and beat until combined.
- *On low speed, gradually add the sugar and beat until fluffy, about 2-3 minutes.
- *If the frosting is too thick you can add a splash of milk or cream, if the frosting is too thin, add more powdered sugar.
Forming the Cake Balls:
- Once the cakes are baked, let them cool in their pans for 5 minutes
- Using a hot pad (in case cake pans are still warm) spoon the cakes into a large mixing bowl.
- Let cake cool in the mixing bowl for approximately 5 minutes or until the cake is able to be handled, but still warm (this helps the cake balls bind easier)
- *Add 1 cup of cream cheese frosting to the cake and mix until combined. If the mixture seems like it isn't binding, add more frosting until you are able to form cake balls.
- *Roll the mixture into 1 inch cake balls and place the balls on a baking sheet lined with parchment paper.
- Place the sheet in the freezer to chill for 1 hour
Decorations:
- While the cake balls are freezing, melt the chocolate slowly either in the microwave or over a double broiler.
- *Take the cake balls out of the freezer and dip each cake ball into the melted chocolate using two forks or a toothpick.
- *Set the cake balls on parchment paper to harden. Add sprinkles right away while the chocolate is still wet.
