112 ozPackage of beef smoked sausage (kielbasa), cut into slices.
1/2White Onion, Diced
110 oz CanRotel (I use hot Rotel to add some spice)
2CupsChicken Broth
8-10ozBow Tie (Farfalle) Pasta
2 CupsSpinach
1CupShredded Mozzarella Cheese
Instructions
Add olive oil to a large skillet over medium heat.
Once the olive oil has warmed, add the diced onion and sliced kielbasa to the skillet. Cook over medium heat for approximately 5 minutes or until kielbasa is brown and onions are translucent.
Add the can of Rotel to the skillet and stir any browned bits off the bottom.
Add the chicken stock to the skillet and bring to a boil.
Once the skillet mixture is boiling add the bow tie pasta, turn the heat down to low, cover the skillet with a lid, and let simmer for approximately 10 minutes or until the pasta is nearly cooked.
Add spinach to the skillet one cup at a time, letting spinach reduce in size with each cup. Stir in between additions.
Once the spinach has wilted and is mixed evenly, add the mozzarella cheese over the top and cover over low heat for an additional 5 minutes or until the cheese is fully melted.
